  • 3 pounds Gold potatoes, washed and cut into bite-sized pieces
  • 2 tablespoons Olive oil Plus more for greasing the pan
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 unit Jalapeño, seeded and diced
  • 1 cup Cheddar cheese, shredded

Instructions

  • Step 1: Prepare the Ingredients. Start by washing and cutting the gold potatoes into bite-sized pieces. Dice the bacon into small pieces and set it aside.
  • Step 2: Cook the Bacon. In a medium skillet over medium heat, add the diced bacon. Cook until crispy and golden brown, about 7-10 minutes. Transfer to a paper towel-lined plate to drain.
  • Step 3: Sauté the Jalapeño. In the same skillet with reserved bacon fat, add the diced jalapeño and sauté for 2-3 minutes until tender.
  • Step 4: Combine Potatoes with Bacon and Jalapeño. In a large mixing bowl, add the cut potatoes, cooked bacon, sautéed jalapeño, olive oil, salt, and pepper. Toss until well coated.
  • Step 5: Bake the Potatoes. Preheat oven to 400°F (200°C). Grease a baking sheet with olive oil. Spread the potato mixture in a single layer and bake for 25-30 minutes until tender and golden brown.
  • Step 6: Add the Cheese. Remove from oven, sprinkle cheese over the potatoes, and return to oven for an additional 5-7 minutes until cheese is melted and bubbly.

Notes

For extra flavor, consider adding garlic powder or onion powder. For crispier potatoes, broil for the last 2-3 minutes.
