  • 1 pound lean ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • ¼ cup salsa
  • 2-3 tablespoons water (as needed)
  • 10 sticks string cheese
  • 10 soft taco-sized tortillas

Instructions

  • Step 1: Prepare the Filling - Heat a large skillet over medium heat. Add the lean ground beef, breaking it apart with a spatula. Cook until fully browned, about 5-7 minutes. Drain excess fat if necessary.
  • Step 2: Season the Beef - Sprinkle taco seasoning over the browned beef. Add salsa and 2-3 tablespoons of water. Stir well and simmer until thickened.
  • Step 3: Prepare the Tortillas - Preheat oven to 400°F (200°C). Warm tortillas in the microwave for 20-30 seconds until pliable.
  • Step 4: Assemble the Taquitos - Place 2-3 tablespoons of beef mixture and a string cheese stick on a tortilla. Roll tightly and tuck in the ends. Repeat until all ingredients are used.
  • Step 5: Bake the Taquitos - Place taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray with olive oil. Bake for 15-20 minutes until golden brown and crispy.
  • Step 6: Serve and Enjoy! - Let taquitos cool for a few minutes. Serve with sour cream, salsa, and guacamole. Sprinkle with chili powder for extra flavor.

Notes

For extra flavor, mix in chopped onions or garlic while cooking the ground beef. Ensure not to overfill the tortillas to prevent bursting. Experiment with different cheeses for varied flavors.
