For the Dip:
  • 30 ounces pinto beans (two 15 oz. cans)
  • 4 ounces cream cheese (softened)
  • 2/3 cup sour cream
  • 1 packet taco seasoning
  • 1/4 cup salsa (your favorite kind)
  • 1 cup freshly shredded cheddar or Mexican blend cheese (divided)

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning. Blend until smooth and creamy.
  3. Step 3: Drain and rinse the pinto beans. Gently fold them into the cream cheese mixture.
  4. Step 4: Stir in the salsa until evenly distributed.
  5. Step 5: Transfer the mixture into a baking dish, layer half of the cheese, add the remaining mixture, and top with the rest of the cheese.
  6. Step 6: Bake for about 20-25 minutes, or until bubbly and golden.
  7. Step 7: Let cool for a few minutes and serve warm with tortilla chips or fresh veggies.

Notes

  • For an extra kick, add diced jalapeños or a dash of hot sauce.
  • Mix in cream cheese with herbs and spices for more flavor.
