Cheesy brioche rolls from Angama Mara

Ingredients
  

  • 4 tsp dried yeast
  • 1 cup lukewarm water
  • 4 cups all-purpose flour
  • 3 tsp salt
  • 3 tbsp sugar
  • 8 large eggs
  • 500 g butter melted but not separated
  • 300 g strong cheddar grated

Method
 

  1. In a small bowl, combine the lukewarm water and dried yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the flour, salt, and sugar. Create a well in the center and add the frothy yeast mixture, followed by the eggs and melted butter. Mix until a soft dough forms.
  3. Transfer the dough to a lightly floured surface and knead for about 10 minutes, or until it’s smooth and elastic.
  4. Place the dough in a greased bowl and cover it with plastic wrap or a damp cloth. Allow it to rise in a warm place for about 1-2 hours, or until it has doubled in size.
  5. Once the dough has risen, punch it down to release any air. On a floured surface, roll it out into a rectangle. Sprinkle the grated cheddar evenly over the dough, then roll it tightly into a log. Cut the log into equal portions, about 2 inches thick.
  6. Place the rolls cut-side up on a greased baking sheet. Cover with plastic wrap or a kitchen towel and let them rise for another 30-60 minutes, until they have puffed up.
  7. Preheat your oven to 375°F (190°C). Once the rolls have risen, bake them for 20-25 minutes or until they are golden brown and sound hollow when tapped on the bottom.
  8. Remove the rolls from the oven and let them cool slightly before serving.
