Start by preheating your oven to 375°F (190°C).
Line a baking sheet with parchment paper.
In a large mixing bowl, combine the cooked quinoa, eggs, cheddar cheese, grated carrot, chopped broccoli, and optional salt. Mix until well combined.
Scoop out portions of the mixture and form them into small balls or patties, about 1-2 tablespoons each, and place them on the prepared baking sheet.
Bake in the preheated oven for about 20-25 minutes, or until golden brown, flipping halfway through.
Once baked, allow to cool for a few minutes before serving warm.
