- Step 1: Preheat and Prepare - Begin by preheating your oven to 375°F (190°C).
- Step 2: Sauté the Mushrooms - In a large skillet, melt 2 tablespoons of salted butter over medium heat. Add half of the sliced mushrooms and sauté until tender, about 5-7 minutes. Remove and set aside.
- Step 3: Prepare the Chicken - In a mixing bowl, beat the 2 eggs. In another bowl, place the Italian bread crumbs. Dip each chicken breast into the beaten eggs and coat thoroughly in the bread crumbs.
- Step 4: Cook the Chicken - In the same skillet, melt the remaining 2 tablespoons of butter and cook the breaded chicken for about 4-5 minutes on each side until golden brown. Remove from heat.
- Step 5: Assemble the Dish - In a baking dish, layer the sautéed mushrooms over the chicken, pour chicken broth on top, and sprinkle with mozzarella cheese.
- Step 6: Bake - Transfer the dish to the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown.
