Ingredients

Ingredients
  • 2 cups old-fashioned rolled oats toasted
  • 1/2 cup whole almonds coarsely chopped
  • 1/3 cup dried blueberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons brown rice syrup
  • 1/2 teaspoon vanilla extract

Equipment

  • Mixing Bowl
  • Baking Pan
  • Parchment Paper
  • Measuring cups and spoons
  • Spatula

Method

Instructions
  1. Step 1: Preheat the Oven - Preheat your oven to 350°F (175°C). This helps to toast the oats and seeds, bringing out their natural flavors.
  2. Step 2: Toast the Oats and Seeds - Spread the old-fashioned rolled oats, pumpkin seeds, and sunflower seeds on a baking sheet. Toast them in the oven for about 10 minutes, stirring halfway through, until they are golden and fragrant.
  3. Step 3: Mix Dry Ingredients - In a large mixing bowl, combine the toasted oats and seeds with the coarsely chopped almonds, dried blueberries, kosher salt, cinnamon, and allspice. Stir until everything is evenly distributed.
  4. Step 4: Prepare the Wet Mixture - In a separate bowl, whisk together the olive oil, honey, brown rice syrup, and vanilla extract. Make sure the mixture is well combined.
  5. Step 5: Combine Mixtures - Pour the wet mixture into the dry ingredients. Use a spatula to mix everything together until all the dry ingredients are coated and sticky.
  6. Step 6: Press into the Pan - Line your baking pan with parchment paper, allowing some overhang for easy removal later. Transfer the granola mixture into the pan and press it down firmly with your spatula. Make sure it is evenly distributed and compact.
  7. Step 7: Bake - Bake the granola bars in the preheated oven for 25-30 minutes, or until the edges are golden brown. Keep an eye on them to prevent burning.
  8. Step 8: Cool and Cut - Once baked, remove the pan from the oven and let it cool completely. Once cooled, lift the bars out using the parchment paper overhang and cut them into squares or rectangles.

Notes

  • For a vegan option, substitute honey with maple syrup.
  • Ensure to toast the oats and seeds for maximum flavor.
  • Store in an airtight container for up to a week at room temperature.
