Instructions
Step 1: Cook the penne pasta according to the package directions. Drain and set aside.
Step 2: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
Step 3: In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds. Sprinkle in the flour, whisking to create a roux. Slowly pour in the half and half, whisking to avoid lumps. Cook until the sauce thickens, about 3-5 minutes.
Step 4: Stir in ground nutmeg, additional salt and pepper, and 1 cup of mozzarella cheese and all of the Parmesan cheese until melted and creamy.
Step 5: In a large bowl, mix the cooked pasta, sautéed chicken, and Alfredo sauce until well coated. Transfer to a greased 9x13 inch baking dish.
Step 6: Sprinkle the remaining 1 cup of mozzarella cheese over the top of the casserole.
Step 7: Preheat the oven to 350°F (175°C) and bake for about 25-30 minutes or until the cheese is bubbly and golden brown.
Step 8: Remove from the oven, let cool for a few minutes, and garnish with freshly chopped parsley before serving.
Notes
For best results, cook pasta al dente, and consider adding vegetables or different cheeses for variations.
