  • 1 pound boneless skinless chicken breast
  • 8 slices thick-cut pepper bacon
  • 1 tablespoon olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder

Instructions

  • Step 1: Preheat your oven to 400°F (200°C). Cut the chicken breasts into thin, even slices about half an inch thick.
  • Step 2: In a small bowl, combine the dried thyme and garlic powder. Coat each slice of chicken with olive oil and sprinkle the seasoning mixture over both sides.
  • Step 3: Wrap each slice of chicken with a slice of bacon, securing with a toothpick or skewer.
  • Step 4: Place the roll ups seam-side down on a baking sheet lined with parchment paper.
  • Step 5: Bake for 20-25 minutes until the chicken is cooked through and the bacon is crispy. Let cool for a few minutes before serving.

Notes

For extra flavor, marinate the chicken in olive oil, thyme, and garlic powder for at least 30 minutes before wrapping. You can also add cheese or herbs inside the roll ups for a delicious surprise.
