  • 12 ounces egg noodles Cooked according to package instructions
  • 6 tablespoons butter Divided
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup Swiss cheese Shredded and divided
  • 2 cups cooked chicken Chopped or shredded
  • 1 cup ham Diced
  • 1 sleeve Ritz crackers Crushed
  • to taste fresh parsley Finely chopped, for garnish
  • to taste Parmesan cheese Shredded, for garnish

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). In a large pot, bring salted water to a boil and cook the egg noodles according to the package instructions until al dente. Drain the noodles and set them aside.
  • Step 2: In a medium saucepan over medium heat, melt 4 tablespoons of butter. Once melted, add in the flour and whisk to combine, creating a roux. Cook for about 2 minutes, stirring constantly. Gradually whisk in the chicken broth and milk, continuing until the mixture is smooth. Bring it to a simmer, allowing it to thicken slightly.
  • Step 3: Stir in the Dijon mustard, Worcestershire sauce, dried thyme, salt, and pepper. Allow the mixture to simmer for another minute or two, then remove from heat. Gently fold in ¾ cup of the Swiss cheese until it’s melted and incorporated into the sauce.
  • Step 4: In a large mixing bowl, combine the cooked egg noodles, chopped chicken, diced ham, and the creamy sauce. Stir until everything is well coated and evenly mixed.
  • Step 5: Transfer the mixture into a greased 9×13-inch baking dish. Spread it out evenly, then top with the remaining Swiss cheese and the crushed Ritz crackers. Drizzle the remaining 2 tablespoons of melted butter over the top for an extra crunch.
  • Step 6: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and the cracker topping is golden brown.
  • Step 7: Once out of the oven, let it sit for a few minutes before serving. Garnish with freshly chopped parsley and a sprinkle of Parmesan cheese for extra flavor. Enjoy!

Notes

For a richer flavor, try using homemade chicken broth instead of store-bought. Feel free to use leftover rotisserie chicken for a quick and easy option. Add some broccoli or spinach into the mix for a pop of color and added nutrition.
