  • 1 tablespoon olive oil
  • 2 pounds boneless skinless chicken breast, cut into 1-inch cubes
  • 1.5 pounds broccoli florets
  • 10 ounces cream of chicken soup
  • 1 cup sour cream
  • 0.5 cup half and half
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 2 cups cheddar cheese, shredded
  • 0.5 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Cut the chicken breasts into 1-inch cubes and wash the broccoli florets.
  • Step 2: In a large skillet, heat olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and cook for 5-7 minutes until cooked through.
  • Step 3: Blanch the broccoli in boiling water for 2-3 minutes, then transfer to an ice bath to stop cooking. Drain and set aside.
  • Step 4: In a mixing bowl, combine cream of chicken soup, sour cream, half and half, garlic powder, and salt. Whisk until smooth.
  • Step 5: Combine the cooked chicken, blanched broccoli, and creamy sauce in a large bowl, stirring gently.
  • Step 6: Transfer the mixture to a greased 9x13-inch baking dish.
  • Step 7: Sprinkle shredded cheddar cheese on top. Mix breadcrumbs with melted butter and sprinkle over the cheese.
  • Step 8: Bake for 30-35 minutes until bubbly and golden brown.
  • Step 9: Let cool for a few minutes before serving. Enjoy!

Notes

For extra flavor, consider marinating the chicken or adding sautéed onions. Leftovers can be stored in the refrigerator for up to 3 days.
