Instructions
Step 1: Preheat your oven to 350°F (175°C). Cut the chicken breasts into 1-inch cubes and wash the broccoli florets.
Step 2: In a large skillet, heat olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and cook for 5-7 minutes until cooked through.
Step 3: Blanch the broccoli in boiling water for 2-3 minutes, then transfer to an ice bath to stop cooking. Drain and set aside.
Step 4: In a mixing bowl, combine cream of chicken soup, sour cream, half and half, garlic powder, and salt. Whisk until smooth.
Step 5: Combine the cooked chicken, blanched broccoli, and creamy sauce in a large bowl, stirring gently.
Step 6: Transfer the mixture to a greased 9x13-inch baking dish.
Step 7: Sprinkle shredded cheddar cheese on top. Mix breadcrumbs with melted butter and sprinkle over the cheese.
Step 8: Bake for 30-35 minutes until bubbly and golden brown.
