Ingredients

Noodles

  • 10 ounces lo mein noodles

Chicken

  • 1 pound boneless skinless chicken breast, cut into thin strips

Seasoning

  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 2 tablespoons olive oil

Vegetables

  • 1 ½ cups carrots, peeled and sliced very thin
  • 1 medium red bell pepper, sliced very thin
  • 6 ounces snow peas
  • 3.5 ounces shiitake mushrooms, sliced

Garnish

  • to taste green onions, thinly sliced for garnish

Instructions

  • Step 1: Cook the Noodles - Begin by bringing a large pot of salted water to a boil. Add the lo mein noodles and cook according to package instructions until they are al dente. Once they are done, drain and rinse under cold water to stop the cooking process. Set aside.
  • Step 2: Marinate the Chicken - In a bowl, combine the sliced chicken with salt, pepper, sesame oil, garlic paste, and ginger paste. Let it marinate for about 10 minutes.
  • Step 3: Sauté the Chicken - In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
  • Step 4: Cook the Vegetables - In the same skillet, add a bit more oil if necessary, and then toss in the sliced carrots, red bell pepper, snow peas, and shiitake mushrooms. Stir-fry the vegetables for about 4-5 minutes, or until they are tender but still crisp.
  • Step 5: Combine Everything - Once the vegetables are cooked to your liking, add the chicken back into the skillet. Then, add the cooked lo mein noodles. Toss everything together gently to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.
  • Step 6: Serve and Garnish - Transfer the Chicken Lo Mein to serving plates and garnish with thinly sliced green onions. Enjoy your homemade deliciousness while it’s hot!

Notes

Leftover Chicken Lo Mein can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through, adding a splash of water or soy sauce if needed.
