  • 8 ounces elbow macaroni (or penne, rigatoni, ziti)
  • 2 tablespoons olive oil
  • 1 pound chicken breasts (skinless and boneless, cut into small pieces)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon dried mustard
  • 1 cup mozzarella cheese (shredded)
  • 2 cups cheddar cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)

  1. Step 1: Cook the Pasta - Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Once cooked, drain the pasta in a colander and set aside.
  2. Step 2: Sauté the Chicken - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional minute. Add the chicken pieces, seasoning with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. Step 3: Make the Cheese Sauce - In the same skillet, sprinkle the flour over the remaining oil and sauté for about a minute. Gradually whisk in the milk, stirring constantly until thickened, about 3-5 minutes. Stir in the dried mustard, mozzarella, cheddar, and Parmesan cheese until melted and smooth.
  4. Step 4: Combine Everything - Add the cooked chicken and drained pasta to the cheese sauce, stirring gently to combine. Adjust seasoning with more salt and pepper if necessary.
  5. Step 5: Serve or Bake - Serve immediately or transfer to a baking dish, sprinkle extra cheese on top, and bake at 350°F (175°C) for about 20 minutes until golden and bubbly.
