Ingredients
  

For the Chicken:
  • 2 pieces boneless skinless chicken breasts about 1 ½ lbs
  • Kosher salt for seasoning
  • black pepper for seasoning
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 3 large eggs
  • 1 cup panko bread crumbs
  • ¾ cup freshly grated Parmesan cheese
  • 1 tablespoon finely chopped parsley
  • 1 teaspoon lemon zest
  • ½ cup olive oil for frying
  • Arugula salad for serving
  • Lemon wedges for serving

Equipment

Method
 

Instructions:
  1. Step 1: Prepare the Chicken - Place the chicken breasts between two pieces of plastic wrap. Pound the chicken to about ½ inch thickness and season with Kosher salt and black pepper.
  2. Step 2: Set Up Your Breading Station - In one dish, combine the flour and garlic powder. In another, beat the eggs. In a third, mix the panko, Parmesan cheese, parsley, and lemon zest.
  3. Step 3: Bread the Chicken - Dredge the chicken in the flour, dip in the eggs, and coat with the panko mixture, pressing to adhere.
  4. Step 4: Fry the Chicken - Heat the olive oil in a skillet over medium-high heat. Fry the chicken for about 4-5 minutes on each side until golden brown and cooked through.
  5. Step 5: Drain and Serve - Transfer the chicken to paper towels to drain excess oil. Serve with arugula salad and lemon wedges.

Notes

  • For a vegetarian version, substitute chicken with thinly sliced eggplant.
  • Add paprika or cayenne for a spicy kick.
  • Freeze breaded chicken for convenient cooking later.
