Chicken Rice-a-Roni Casserole

A comforting, easy casserole combining Rice-A-Roni, cream of chicken soup, sour cream, and cooked chicken topped with crispy fried onions.

Ingredients
  

  • 1 box Chicken flavor Rice-A-Roni
  • 1 can (10.5 oz) unsalted cream of chicken soup
  • 1 cup sour cream
  • 4 cups cooked chopped chicken or 1 whole rotisserie chicken, chopped
  • 1 can (6 oz) French fried onions

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the Chicken flavor Rice-A-Roni according to the package directions in a skillet or saucepan; cook until the rice is tender and liquid is absorbed.
  3. In a mixing bowl, combine the prepared Rice-A-Roni with the can of unsalted cream of chicken soup, sour cream, and the cooked chopped chicken; stir until evenly combined.
  4. Spread the rice and chicken mixture into a lightly sprayed or greased 9×13-inch baking dish and smooth the top.
  5. Sprinkle the French fried onions evenly over the top of the casserole.
  6. Bake the casserole uncovered in the preheated oven for 30 minutes, until heated through and the topping is golden.

Notes

  • This can be made in advance and refrigerated or frozen.
  • Low-fat sour cream or plain Greek yogurt can be used as a substitute.
  • Using unsalted cream of chicken soup helps control sodium.
  • Use a rotisserie chicken for convenience.
  • Allow casserole to sit a few minutes after baking before serving.
