Start by preheating your oven to 375°F (190°C). If you’re using an air fryer, preheat it according to the manufacturer's instructions.
In a large mixing bowl, combine the shredded chicken, salsa verde, light sour cream, chili powder, garlic powder, cumin, and sliced green onions. Mix until everything is well incorporated.
Carefully lay out the wonton wrappers on a clean surface. Spoon about a tablespoon of the chicken mixture into the center of each wrapper. Fold the sides of the wrapper over the filling and press to seal, creating a taco shape.
Place the assembled wonton tacos on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray. Bake in the preheated oven for about 10-12 minutes or until golden brown.
Once the wonton tacos are crispy, remove them from the oven and sprinkle the reduced fat Mexican blend cheese on top. Return to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Remove the tacos from the oven and let them cool slightly. If desired, top with diced avocados and fresh cilantro before serving. Enjoy!
