Instructions
Step 1: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
Step 2: In a large mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, cornstarch, baking soda, and salt. Whisk them together until well incorporated.
Step 3: Add the cold butter cubes to the bowl of dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
Step 4: Pour in the slightly beaten eggs and almond extract into the mixture. Stir until the dough starts to come together.
Step 5: Scoop out tablespoon-sized portions and roll them into balls. Place them a few inches apart on the prepared baking sheets. Gently flatten each ball.
Step 6: Press an almond slice onto the center of each cookie.
Step 7: In a small bowl, whisk together the remaining egg and water to create an egg wash. Brush this mixture lightly over the tops of the cookies.
Step 8: Bake the cookies for 12-15 minutes, or until they are lightly golden around the edges.
Step 9: Once baked, let the cookies cool on the sheets for about 10 minutes before transferring them to a wire rack to cool completely.
Notes
For extra almond flavor, consider using almond meal instead of almond flour. Make sure your butter is cold to achieve the desired texture.
