Ingredients

For the Sauce:
  • 4 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar
  • 3 slices ginger peeled

Method
 

Cooking Instructions:
  1. Start by slicing the chicken breasts into bite-sized pieces. This helps them cook evenly and absorb more flavor from the sauce.
  2. In a non-stick skillet, add a splash of oil over medium heat. Allow it to warm up until it’s shimmering.
  3. Add the sliced chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
  4. In a small bowl, combine the soy sauce, lemon juice, and sugar. Stir until the sugar is dissolved. Add the ginger slices to the mixture for that extra zing.
  5. Pour the sauce over the cooked chicken in the skillet. Stir well to coat all the pieces in the sauce. Let it simmer for another 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Once the sauce is at the desired consistency, remove the skillet from heat. Serve your Chinese Mandarin Chicken hot, garnished with chopped scallions for a fresh finish.
