Ingredients
  

  • 2-3 chipotle chiles in adobo finely chopped
  • 1/2 cup ketchup
  • 1/2 tablespoon tomato paste
  • 6 cloves garlic chopped
  • 2 teaspoons oregano
  • 1/2 teaspoon chili powder
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper freshly ground
  • 1 3-pound boneless beef chuck roast trimmed of excess fat
  • Chopped fresh cilantro optional
  • Sliced green onion optional

Method
 

  1. In a mixing bowl, combine the chipotle chiles, ketchup, tomato paste, garlic, oregano, chili powder, salt, and black pepper. Stir until well combined and set aside.
  2. In a hot skillet over medium-high heat, sear the beef chuck roast on all sides until browned, about 4-5 minutes per side.
  3. Place the beef in the slow cooker or Dutch oven. Pour the sauce mixture over the beef, ensuring it’s well-coated.
  4. If using a slow cooker, set it to low and cook for 8 hours or high for 4 hours. If using a Dutch oven, cover and cook in a preheated oven at 300°F (150°C) for about 3-4 hours, or until the beef is fork-tender.
  5. Once cooked, remove the beef from the cooker and let it rest for a few minutes. Shred the beef into bite-sized pieces, mixing it back into the sauce.
  6. Spoon the Chipotle Beef into warm tortillas, and top with your favorite garnishes like chopped cilantro and sliced green onion.

Notes

  • You can store leftover shredded beef in an airtight container in the fridge for up to 4 days.
  • For longer storage, freeze the beef in portions for up to 3 months.
  • To reheat, thaw in the refrigerator overnight and warm on the stove or in the microwave.
