  • 4 eggs beaten
  • 1 cup chopped pistachio nuts (or walnuts)
  • 3 oz white chocolate roughly chopped
  • Confectioners sugar sifted, for dusting

Method
 

  1. Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C). This ensures that your brownies bake evenly.
  2. Step 2: Prepare the Baking Dish. Grease a 9x9 inch baking dish with a little butter or line it with parchment paper. This will make it easier to remove the brownies later.
  3. Step 3: Melt the Chocolate. In a heatproof bowl, combine the dark chocolate and butter. Melt them together over a pot of simmering water, stirring occasionally until smooth. Alternatively, you can microwave them in 30-second intervals until melted.
  4. Step 4: Mix the Batter. In a large mixing bowl, whisk together the melted chocolate mixture and superfine sugar until well combined. Add the beaten eggs and mix until completely incorporated.
  5. Step 5: Add Dry Ingredients. Fold in the self-rising flour gently, being careful not to overmix. This will ensure your brownies remain tender.
  6. Step 6: Incorporate Nuts and White Chocolate. Stir in the chopped pistachio nuts (or walnuts) and white chocolate pieces until evenly distributed throughout the batter.
