  • 1 cup mini chocolate chips divided

Step-by-Step Instructions:
  1. Step 1: Prepare the Crust - Preheat your oven to 325°F (160°C). In a food processor, crush the 30 Oreo cookies into fine crumbs. Transfer the crumbs to a mixing bowl, and pour in the melted butter. Stir until the mixture is well combined and resembles wet sand. Press the mixture evenly into the bottom of a greased or lined 9x13 inch baking pan.
  2. Step 2: Make the Cheesecake Filling - In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy. This usually takes about 2-3 minutes. Gradually add the granulated sugar, sour cream, and vanilla extract, mixing well after each addition.
  3. Step 3: Add the Dry Ingredients - Once your mixture is smooth, sprinkle in the flour and mix until just combined. Be careful not to overmix.
  4. Step 4: Incorporate the Eggs - Add the eggs one at a time, mixing on low speed after each addition until just combined. This will help keep the mixture light and fluffy.
  5. Step 5: Fold in Chocolate Chips - Gently fold in ¾ cup of the mini chocolate chips into the cheesecake mixture, reserving the remaining ¼ cup for topping.
