Chocolate Peanut Butter Bites

Ingredients
  

  • 1 cup packed Medjool dates pitted
  • ½ cup natural peanut butter
  • ½ cup roasted peanuts
  • 3 tablespoons unsweetened coconut flakes
  • 2 tablespoons hemp seeds
  • 2 tablespoons cocoa powder
  • ¼ teaspoon salt (see note)
  • Cocoa powder (for rolling)

Method
 

  1. Start by pitting the Medjool dates, ensuring they are soft and sticky. If your dates are a bit firm, soak them in warm water for about 10-15 minutes, then drain.
  2. In your food processor, combine the pitted dates and peanut butter. Pulse a few times until they are well mixed.
  3. Next, add the roasted peanuts, coconut flakes, hemp seeds, cocoa powder, and salt to the mixture. Blend until all ingredients are fully combined and a sticky dough forms.
  4. Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is shaped into bites.
  5. Place some cocoa powder in a small bowl and roll each bite in it until coated. This adds an extra layer of chocolatey goodness!
  6. Transfer the coated bites to a lined baking sheet and place them in the refrigerator for at least 30 minutes to firm up.

Notes

  • Store in an airtight container in the refrigerator for up to two weeks.
  • Freeze for longer storage, up to three months, separating layers with parchment paper.
  • Allow frozen bites to thaw in the fridge for a few hours before enjoying.
