  • 1 egg yolk at room temperature
  • 1/2 cup peanut butter creamy
  • 3/4 cup brown sugar
  • 1/2 cup old-fashioned oats
  • 1 1/2 cups flour (can use part whole wheat)
  • 1/2 tsp salt
  • 12 oz semi-sweet chocolate chips
  • 6 oz peanut butter chips (I use Reese's)
  • 1 cup English toffee bits

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line a 9x13 inch baking pan with parchment paper, allowing some overhang on the sides.
  3. Step 3: In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy.
  4. Step 4: Mix in the creamy peanut butter and the egg yolk until well combined.
  5. Step 5: In a separate bowl, whisk together the flour, old-fashioned oats, and salt. Gradually add to the wet ingredients.
  6. Step 6: Fold in the English toffee bits gently.
  7. Step 7: Pour the batter into the prepared baking pan.
  8. Step 8: Bake for 20-25 minutes, or until edges are lightly golden.
  9. Step 9: Remove from oven and sprinkle the chocolate and peanut butter chips over the top.
  10. Step 10: Allow to cool for 30 minutes before lifting out and cooling completely on a wire rack.

Notes

  • Use softened butter for the best texture.
  • Don’t overmix the batter to keep bars tender.
  • Store in an airtight container for up to a week.
