Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: Prepare your muffin tin by greasing it or lining it with muffin liners.
Step 3: In a large mixing bowl, whisk together the flour, baking powder, salt, and ½ cup of sugar.
Step 4: In another bowl, combine the melted butter, milk, and vanilla extract. Mix until smooth.
Step 5: Pour the wet ingredients into the dry ingredients and stir until just combined.
Step 6: Divide the batter evenly among the muffin cups, filling each about ¾ full.
Step 7: Bake for 15-18 minutes, or until a toothpick comes out clean.
Step 8: Prepare the cinnamon sugar coating by mixing the remaining sugar and cinnamon in a small bowl.
Step 9: Brush the tops of the muffins with melted butter and roll them in the cinnamon sugar mixture.
Step 10: Let the muffins cool slightly on a wire rack before serving.
Notes
For best results, measure flour accurately and avoid overmixing the batter.
