Ingredients
  

For the Toffee:
  • 2 cups unsalted butter (4 sticks)
  • 2 cups granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 30 ounces Ghirardelli White Melting Wafers (Three 10-ounce bags)
For the Cinnamon Sugar Topping:
  • ¾ cup granulated sugar
  • 1 tablespoon cinnamon

Instructions
  1. Step 1: Prepare Your Baking Sheet - Line a baking sheet with parchment paper.
  2. Step 2: Make the Toffee - In a heavy-bottomed saucepan, combine the unsalted butter, granulated sugar, salt, and vanilla extract. Cook over medium heat, stirring constantly until the mixture comes to a boil.
  3. Step 3: Cook the Mixture - Allow the mixture to boil undisturbed for about 8-10 minutes. Aim for 300°F (hard crack stage).
  4. Step 4: Pour the Toffee - Carefully pour the hot toffee onto the prepared baking sheet, spreading it into an even layer. Let it cool for about 10-15 minutes.
  5. Step 5: Prepare the Cinnamon Sugar - Mix together the granulated sugar and cinnamon in a small bowl.
  6. Step 6: Melt the White Chocolate - Melt the white melting wafers until smooth using a double boiler or microwave.
  7. Step 7: Coat the Toffee - Pour the melted white chocolate over the toffee and sprinkle the cinnamon sugar mixture on top.
  8. Step 8: Cool and Break - Allow the toffee to cool completely, then break into pieces and enjoy!
