- Heat 2 Tbsp coconut oil (or extra virgin olive oil) in a medium saucepan over medium-high heat until melted.
- Add 1 cup long grain rice ( jasmine or basmati, rinsed and well drained) and stir to coat the rice in the oil. Continue stirring until the rice starts to turn golden.
- Add 1 garlic clove, minced, and stir about 1 minute until fragrant.
- Pour in 1 ½ cups filtered water and add ½ tsp fine sea salt. Bring to a gentle simmer.
- Reduce heat to low, cover the saucepan, and simmer until all the water is absorbed, about 18 minutes (or follow your rice package instructions).
- Remove the pan from the heat and keep it covered; let the rice rest for 10 minutes.
- Transfer the rice to a serving bowl and fluff with a fork. Add the zest of 1 lime, 1 Tbsp lime juice, and ½ bunch cilantro (finely chopped, about ½ cup loosely packed). Toss gently to combine.
- Taste and adjust seasoning by adding more lime juice and/or salt if desired.
