Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream the softened butter, brown sugar, honey, molasses, and vanilla extract until light and fluffy.
In a separate bowl, whisk together all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and salt.
Gradually add dry ingredients to the wet mixture, mixing until just combined.
Roll out the dough to about 1/8 inch thickness on a floured surface.
Cut the dough into squares or rectangles and place on a baking sheet lined with parchment paper.
Sprinkle cinnamon sugar on top of each cracker.
Bake for 10-12 minutes until edges are golden brown.
Let cool on baking sheet for a few minutes before transferring to a wire rack.
