Ingredients
  

  • 8 tbsp butter softened
  • 1/3 cup brown sugar for sweetness
  • 1 1/2 tbsp honey natural sweetener
  • 1/2 tbsp molasses adds depth of flavor

  • 3/4 cup all-purpose flour provides structure
  • 2/3 cup whole wheat pastry flour for nutty flavor
  • 1/2 tbsp cinnamon the star ingredient
  • 1/2 tsp baking soda helps crackers rise

  • to taste cinnamon sugar for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter, brown sugar, honey, molasses, and vanilla extract until light and fluffy.
  3. In a separate bowl, whisk together all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  5. Roll out the dough to about 1/8 inch thickness on a floured surface.
  6. Cut the dough into squares or rectangles and place on a baking sheet lined with parchment paper.
  7. Sprinkle cinnamon sugar on top of each cracker.
  8. Bake for 10-12 minutes until edges are golden brown.
  9. Let cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a dairy-free version, use coconut oil or dairy-free spread.
  • To make it gluten-free, substitute with a gluten-free flour blend.
  • Store in an airtight container for up to 1 week or freeze for up to 3 months.
