Classic Calzones: Step-by-Step Guide
  1. Step 1: Prepare the Dough
    In a large mixing bowl, combine the bread flour, instant yeast, and salt. Make a well in the center and add the olive oil and warm water. Mix with a wooden spoon until the dough begins to come together.
  2. Step 2: Knead the Dough
    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed. Once kneaded, place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  3. Step 3: Prepare the Filling
    While the dough is rising, prepare your filling. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute. In a mixing bowl, combine the ricotta, half of the mozzarella, half of the provolone, and any additional toppings you desire. Season with salt and pepper to taste. Mix well and set aside.
