Preheat your oven to 325°F (160°C) for a lovely golden color.
Line a baking sheet with parchment paper to prevent sticking.
In a mixing bowl, add the egg whites and salt. Beat until stiff peaks form.
Gently fold in the coconut, sugar, and vanilla extract into the egg whites.
Scoop mounds of the mixture onto the prepared baking sheet, leaving space between each.
Bake for 20-25 minutes until the tops are golden brown.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
