Ingredients
  

For the Crackers:
  • 3 tablespoons coconut flour (24g)
  • 2 tablespoons butter (melted, 28g)
  • ½ cup strong cheddar (grated, 50g)
  • ¼ cup parmesan (grated, 25g)
  • 1 egg
  • fresh thyme leaves (to taste, or dried thyme)

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). This step is crucial to ensure that your crackers bake evenly and become perfectly crisp.
  2. Step 2: Line a baking sheet with parchment paper. This will keep your crackers from sticking and make for easy cleanup.
  3. Step 3: In a mixing bowl, combine the coconut flour, melted butter, grated cheddar, grated parmesan, egg, and thyme. Mix well until a dough forms. The mixture should be cohesive but not sticky.
  4. Step 4: Place the dough on a lightly floured surface (you can use more coconut flour) and roll it out to about ¼-inch thickness. The thinner you roll, the crispier your crackers will be.
  5. Step 5: Using a pizza cutter or knife, cut the rolled-out dough into squares or rectangles. You can make them as big or small as you like, but keep in mind they will expand slightly while baking.
  6. Step 6: Transfer the cut dough to the prepared baking sheet and bake for 12-15 minutes or until golden brown. Keep an eye on them, as baking times may vary depending on your oven.
  7. Step 7: Once baked, remove the crackers from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack. Once completely cool, they are ready to be enjoyed!
