Ingredients
  

  • 1 box confetti cake mix (15.5 ounce)
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup butter (softened)
  • 1 teaspoon vanilla extract
  • 1/2 cup rainbow sprinkles

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a cookie sheet with parchment paper.
  3. In a large mixing bowl, combine the confetti cake mix and baking powder. Whisk until well mixed.
  4. Add the softened butter, eggs, and vanilla extract. Beat on medium speed until creamy.
  5. Gently fold in the rainbow sprinkles with a spatula.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • For extra flavor, add a pinch of salt to balance the sweetness.
  • Chill the dough for 30 minutes for thicker cookies.
  • Mix in chocolate chips or nuts for added texture.
