Ingredients
  

For the Marinade:
  • 1 medium red onion coarsely chopped
  • 4 cloves garlic coarsely chopped
  • 2 tablespoons adobo sauce from chipotle peppers can
  • 2 tablespoons olive oil
  • 2 tablespoons ancho chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • as needed water to adjust marinade consistency
For the Chicken:
  • 3 to 4 pounds boneless skinless chicken thighs

Instructions
  1. Step 1: Prepare the Marinade. Blend the onion, garlic, adobo sauce, olive oil, ancho chile powder, cumin, oregano, salt, and black pepper until smooth. Add water as needed.
  2. Step 2: Marinate the Chicken. Coat the chicken thighs with the marinade and marinate for at least 1 hour, preferably overnight.
  3. Step 3: Cook the Chicken. Preheat skillet or grill to medium-high. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F.
  4. Step 4: Rest and Slice. Let the chicken rest for 5-10 minutes, then slice into strips.
  5. Step 5: Serve and Enjoy. Serve in burrito bowls, tacos, or salads with your favorite toppings.

Notes

  • Marinate chicken overnight for best flavor.
  • Use chicken thighs for juiciness; breasts may dry out.
