Cottage Cheese Jell-O Salad

A light, creamy Jell-O salad made with cottage cheese, crushed pineapple, and whipped topping for an easy chilled dessert or side.

Ingredients
  

  • 1 16-ounce container cottage cheese
  • 1 15-ounce can crushed pineapple drained
  • 1 3-ounce box powdered gelatin any flavor
  • 1 8-ounce container whipped topping thawed
  • fresh fruit (optional) such as chopped strawberries, cherries, or raspberries for garnish

  • Spatula or spoon

  • plastic wrap or lid
  • Serving bowl or dish

Method
 

  1. In a large bowl, combine the cottage cheese, drained crushed pineapple, and powdered gelatin; stir until evenly mixed.
  2. Gently fold in the thawed whipped topping with a spatula until just combined, taking care not to overmix.
  3. Cover the bowl and refrigerate for at least 1 hour, or until the mixture is set.
  4. Before serving, garnish with chopped fresh fruit if desired.

Notes

  • Use any Jell-O flavor you prefer.
  • Be sure to drain the crushed pineapple well.
  • Fold gently to keep the whipped topping light.
  • Chill for at least 1 hour to allow setting.
