Ingredients
  

  • 3 large eggs
  • 5 tablespoons cottage cheese
  • 2 teaspoons whole milk
  • 1/4 teaspoon kosher salt
  • 2 pinches black pepper
  • 1 1/2 teaspoons olive oil
  • 1 tablespoon chopped green onions

Method
 

  1. In a mixing bowl, crack the 3 large eggs and add the 2 teaspoons of whole milk, 1/4 teaspoon of kosher salt, and 2 pinches of black pepper. Use a whisk or fork to beat the mixture until it is well combined and slightly frothy.
  2. Gently fold in the 5 tablespoons of cottage cheese into the egg mixture. You want to ensure it’s evenly distributed without over-mixing, as you want the cottage cheese to maintain its texture.
  3. Place your non-stick skillet over medium heat and add 1 1/2 teaspoons of olive oil. Allow the oil to heat until it shimmers but is not smoking.
  4. Pour the egg and cottage cheese mixture into the skillet. Let it cook undisturbed for about 2-3 minutes, or until the edges begin to set.
  5. Sprinkle the 1 tablespoon of chopped green onions over one half of the omelette. This will add a fresh, mild onion flavor that lifts the dish.
  6. Once the center of the omelette is mostly set but still slightly runny, use a spatula to carefully fold the omelette in half over the green onions. Let it cook for another minute to ensure the inside is fully cooked. Slide it onto a plate and enjoy your delicious Cottage Cheese Omelette!
