Cottage Cheese Pancakes

Light, protein-rich pancakes made with cottage cheese, eggs, and oats for a quick breakfast.

Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup rolled oats
  • oil for cooking as needed

Equipment

  • Non-stick Skillet
  • Spatula
  • Measuring cup
  • lid for pan

Method
 

  1. Place the cottage cheese, eggs, and rolled oats in a blender and blend until the batter is smooth and uniform.
  2. Heat a non-stick skillet over medium heat and add a little oil to coat the surface.
  3. Pour 1/4-cup portions of batter onto the hot skillet, then immediately cover the pan with a lid.
  4. Cook the pancakes covered for 2–3 minutes until the bottoms are set and lightly golden.
  5. Flip each pancake and cook for another 2 minutes, or until cooked through and golden on the other side.
  6. Remove cooked pancakes to a plate and repeat with remaining batter until all pancakes are made.

Notes

  • This recipe yields about 12 medium pancakes or 6 extra-large pancakes.
  • Refrigerate leftovers in an airtight container and eat within 3 days.
  • To freeze, layer pancakes with parchment between them in an airtight container for up to 3 months.
  • Reheat in the microwave for 20–30 seconds or in a non-stick pan until heated through.
