Sift together the all-purpose flour, oat bran, baking soda, and salt into a bowl to remove lumps.
Place the sifted dry ingredients in a blender. Add the eggs, cottage cheese, milk, and vanilla.
Blend until the batter is smooth and well combined.
Pour about 1/4 cup batter per pancake onto the hot griddle or skillet, leaving space between pancakes.
Cook until the edges are set and bubbles form on the surface, then flip and cook until the second side is golden and cooked through.
Serve the pancakes immediately.
