Cottage Cheese Pudding

A quick and creamy chocolate pudding made with cottage cheese, cocoa, and honey.

Ingredients
  

  • 2 cups cottage cheese
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons honey or more, as needed

Equipment

  • high-speed blender or food processor
  • Spatula

Method
 

  1. Add the cottage cheese, cocoa powder, and honey to a high-speed blender or food processor.
  2. Blend until completely smooth and creamy, stopping to scrape down the sides as needed.
  3. Taste and adjust sweetness with more honey or richness with more cocoa powder if desired.
  4. Transfer the pudding into serving bowls, cover, and refrigerate for at least 30 minutes before serving.

Notes

  • Add 1 tbsp cocoa and 1 tbsp chocolate chips, then melt chocolate over the top for a brownie-batter variation.
  • For strawberry cheesecake, omit peanut flour, add sliced strawberries and one crushed graham cracker.
  • For cookies-and-cream, omit peanut flour and add two crushed sandwich cookies.
  • For chocolate peanut butter, add 1 tbsp peanut butter and 1 tbsp cocoa powder, and optionally drizzle melted chocolate and peanut butter on top.
  • Stir in crumbled edible cookie dough for a chocolate chip cookie dough variation.
