Method
- Add the cottage cheese, cocoa powder, and honey to a high-speed blender or food processor.
- Blend until completely smooth and creamy, stopping to scrape down the sides as needed.
- Taste and adjust sweetness with more honey or richness with more cocoa powder if desired.
- Transfer the pudding into serving bowls, cover, and refrigerate for at least 30 minutes before serving.
Notes
- Add 1 tbsp cocoa and 1 tbsp chocolate chips, then melt chocolate over the top for a brownie-batter variation.
- For strawberry cheesecake, omit peanut flour, add sliced strawberries and one crushed graham cracker.
- For cookies-and-cream, omit peanut flour and add two crushed sandwich cookies.
- For chocolate peanut butter, add 1 tbsp peanut butter and 1 tbsp cocoa powder, and optionally drizzle melted chocolate and peanut butter on top.
- Stir in crumbled edible cookie dough for a chocolate chip cookie dough variation.
