Creamy Chicken Caesar Dip

Ingredients
  

  • 1/2 rotisserie chicken, no skin shredded
  • 2 cups American cheese shredded
  • 1 cup Parmesan cheese shredded
  • 8 ounces cream cheese room temperature
  • 1 1/2 cups Caesar dressing
  • 1/4 cup Parmesan cheese shredded, for topping
  • 2 tablespoons green onions chopped, for garnish

Method
 

  1. Preheat the oven to 350°F (175°C). Grease an 8x8-inch deep baking dish with butter or cooking spray.
  2. Shred the rotisserie chicken by hand into small pieces and spread evenly in the prepared baking dish.
  3. Drizzle 1/2 cup of the Caesar dressing over the shredded chicken, spreading gently so the chicken is lightly coated.
  4. In a large mixing bowl, combine the shredded American cheese, 1 cup shredded Parmesan, softened cream cheese, and 1 cup Caesar dressing.
  5. Use a hand mixer to beat the mixture until smooth and fully combined.
  6. Spread the cheese mixture evenly over the dressed chicken in the baking dish and level the top.
  7. Bake for 25–30 minutes, until the top is golden and the dip is bubbly. If desired, broil for up to 2 minutes after 25 minutes to crisp the top—watch carefully to avoid burning.
  8. Remove from the oven and sprinkle the remaining 1/4 cup shredded Parmesan and the chopped green onions over the top.
  9. Serve immediately while warm.

Notes

  • Use room-temperature cream cheese for easier mixing.
  • Watch closely if broiling to prevent burning.
  • Shred chicken finely for better texture in the dip.
