Instructions
Step 1: Season the chicken breasts with salt and pepper on both sides.
Step 2: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side until golden brown. Remove and set aside.
Step 3: In the same skillet, add sliced mushrooms and sauté for 3-4 minutes. Add minced garlic and cook for another minute.
Step 4: Sprinkle flour over the mushrooms and garlic, stir to combine, then pour in the dry apple cider vinegar. Allow to reduce for 2-3 minutes.
Step 5: Pour in the whole milk (or heavy cream) and stir until well combined. Add Parmesan cheese and mix until melted. Season with salt and pepper.
Step 6: Stir in baby spinach and let it wilt for about 2 minutes.
Step 7: Return the chicken to the skillet, coating with the sauce. Simmer for 3-5 minutes to heat through.
Step 8: Serve over pasta, rice, or with crusty bread. Garnish with extra Parmesan if desired.
Notes
For best results, use freshly grated Parmesan cheese. You can also substitute baby spinach with kale or add other vegetables.
