Creamy Cilantro Lime Sauce

  • 1 cupsour cream
  • 1/4 cupmayonnaise
  • 1/2 cupcilantro leaves loosely packed
  • 2 teaspoonslime zest
  • 1-1/2 to 2 tablespoonsfresh lime juice depending on how tart you like your sauce
  • 1 clovegarlic peeled and minced (optional)
  • kosher salt to taste

Method
 

Instructions
  1. Add 1 cup sour cream, 1/4 cup mayonnaise, 1/2 cup cilantro leaves (loosely packed), 2 teaspoons lime zest, 1–1/2 to 2 tablespoons fresh lime juice, and 1 clove minced garlic (optional) to the bowl of a food processor.
  2. Pulse the ingredients until the cilantro is finely minced and the mixture is smooth and creamy, stopping to scrape down the sides of the bowl as needed.
  3. Taste the sauce and season with kosher salt to taste.
  4. Transfer the sauce to an airtight container and refrigerate for at least one hour to allow the flavors to meld; the sauce will thicken slightly as it chills.
  5. Keep covered in the refrigerator for up to 3 days.

Notes
*If using garlic, I like to soak it in the lime juice for about 10 minutes before adding it to the food processor. This takes away the harshness that raw garlic can have. If you prefer a sharper garlic flavor, skip this step.
