  • 1 16-ounce package refrigerated cheese tortellini the star of the dish, offering a cheesy and tender bite
  • 2 tablespoons olive oil divided
  • 1.5 pounds medium to large shrimp peeled and deveined
  • 1 teaspoon Cajun or Creole seasoning for a kick of spice
  • 0.5 medium yellow or sweet onion diced
  • 0.5 red bell pepper diced
  • 8 ounces smoked sausage sliced
  • 2 cloves garlic minced
  • 0.5 cup butter (I use salted)
  • 1 cup heavy cream the secret to the creamy texture
  • 0.25 teaspoon dried thyme enhances the overall flavor profile
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.5 cup freshly grated Parmesan cheese adds creaminess and a salty punch
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Instructions:
  1. In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and red bell pepper, sautéing until softened (about 3-4 minutes). Add the sliced smoked sausage and minced garlic, cooking for an additional 2-3 minutes until fragrant.
  4. Add the butter to the skillet, allowing it to melt completely. Pour in the heavy cream, stirring to combine. Add the dried thyme and cayenne pepper (if using). Let the sauce simmer for a few minutes until it thickens slightly.
  5. Return the sautéed shrimp to the skillet and add the cooked tortellini. Stir to coat everything in the creamy sauce. Gradually mix in the grated Parmesan cheese until melted and the sauce is creamy.
