Ingredients
  

For the Pinwheels:
  • 2 cans refrigerated crescent rolls
  • 1 8oz. cream cheese
  • 1/2 cup mayonnaise
  • 1 packet taco seasoning
  • 2 cups diced cooked chicken use leftover rotisserie chicken or any cooked chicken on hand
  • 1 4oz. can green chiles do not drain the liquid for extra moisture
  • 2 tbsp diced black olives optional
  • 1/2 lime juice
  • to taste sour cream for serving

Method
 

Steps to Prepare:
  1. Preheat your oven to 375°F (190°C) to ensure it’s nice and hot when the pinwheels are ready to bake.
  2. In a mixing bowl, combine the cream cheese, mayonnaise, and taco seasoning. Mix until smooth. Then, add the diced cooked chicken, green chiles (with liquid), and optional diced black olives. Squeeze in the lime juice and mix until everything is well combined.
  3. Open the cans of crescent rolls and unroll them on a clean surface. You’ll want to separate the dough into triangles along the perforated lines.
  4. Take a generous spoonful of the chicken filling and spread it evenly over each triangle of crescent roll dough, leaving a small border around the edges.
  5. Starting at the wide end of each triangle, carefully roll the dough towards the pointed end, enclosing the filling. Place the rolled pinwheels seam-side down on a baking sheet lined with parchment paper.
  6. Bake the pinwheels in the preheated oven for 12-15 minutes, or until they are golden brown and puffed up.
  7. Once baked, remove the pinwheels from the oven and let them cool slightly. Serve warm with a side of sour cream for dipping.

Notes

  • For an extra flavor boost, consider adding some diced jalapeños to the filling if you like heat.
  • Chilling the filled pinwheels in the fridge for 30 minutes before baking can help them hold their shape better.
  • Using fresh lime juice versus bottled makes a noticeable difference in flavor.
