Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
Pat the chicken wings dry thoroughly with paper towels and place them in a large mixing bowl.
Drizzle the wings with 2 tablespoons olive oil and toss to coat each wing evenly.
Sprinkle 1 teaspoon freshly ground black pepper and 2 teaspoons sea salt over the wings and toss to distribute. If using baking powder, add 1 tablespoon now and toss until coated.
Arrange the wings in a single layer on the prepared baking sheet with space between pieces for airflow.
Bake for 40 to 45 minutes, turning once if desired, until the wings are golden brown and crispy.
Remove from the oven, taste and sprinkle additional salt and pepper if desired, then garnish with chopped parsley before serving.
