Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 packet taco seasoning (about 2 tablespoons)
  • 3/4 cup mild enchilada sauce
  • 2 cups freshly shredded sharp Cheddar cheese
  • 6 large flour tortillas (burrito-sized)
  • 1 can refried beans (16-ounce)

  • optional toppings such as diced tomatoes, shredded lettuce, sliced jalapeños, or guacamole

Method
 

  1. Step 1: Preheat the Oven - Start by preheating your oven to 400°F (200°C).
  2. Step 2: Prepare the Filling - In a large mixing bowl, combine the shredded chicken, taco seasoning, and enchilada sauce. Mix until evenly coated.
  3. Step 3: Assemble the Wraps - Lay out a tortilla, spread refried beans in the center, add the chicken mixture, and top with cheese.
  4. Step 4: Roll It Up - Fold in the sides and roll tightly from the bottom to the top.
  5. Step 5: Prepare for Baking - Place the wraps seam-side down on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray.
  6. Step 6: Bake - Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy.
  7. Step 7: Slice and Serve - Once baked, let cool for a minute, slice in half diagonally, and serve with toppings.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Assemble wraps without baking for meal prep.
  • Add extra cooking time if baking from cold.
