Ingredients

For the Chicken:
  • 4 to 5 pounds bone-in, skin-on chicken thighs
  • 1/2 cup unsalted butter melted
  • 4 cloves garlic minced
  • 2 tablespoons Italian seasoning
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Equipment

  • Large mixing bowl
  • Baking dish or sheet pan
  • Meat Thermometer
  • Garlic press
  • Pastry brush or spoon

Method

Cooking Instructions
  1. Preheat your oven to 425°F (220°C). A hot oven is essential for achieving that crispy skin.
  2. In a large mixing bowl, melt the unsalted butter. Once melted, add in the minced garlic, Italian seasoning, sea salt, and black pepper. Stir well to combine.
  3. Pat the chicken thighs dry with paper towels and place them in the baking dish, skin side up.
  4. Generously coat each chicken thigh with the garlic butter mixture using a pastry brush or spoon.
  5. Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the chicken is cooked through with an internal temperature of 165°F (74°C).
  6. If the skin isn’t crispy enough, switch to broil for an additional 2-4 minutes, watching closely to prevent burning.
  7. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken thighs in the garlic butter mixture for a few hours or overnight.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • To reheat, place in a preheated oven at 350°F (175°C) for about 15-20 minutes.
