Ingredients
  

  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups 2% or whole milk
  • 2 large eggs
  • ½ cup melted butter or oil
  • 2 teaspoons vanilla extract

Method
 

  1. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, granulated sugar, baking powder, and salt until well combined.
  2. In another bowl, combine the milk, eggs, melted butter or oil, and vanilla extract. Beat until smooth and creamy.
  3. Pour the wet mixture into the dry ingredients. Gently fold together until just combined; a few lumps are fine.
  4. Preheat your waffle iron according to the manufacturer's instructions and lightly grease if necessary.
  5. Using a ladle, pour about ¾ cup of batter onto the preheated waffle iron. Cook according to your machine's instructions, generally around 4-5 minutes.
  6. Carefully remove the waffles and serve immediately with your favorite toppings.

Notes

  • For added fiber, substitute half the all-purpose flour with whole wheat flour.
  • Reduce sugar to ¼ cup for a lighter option.
  • Cooked waffles can be stored in the fridge for up to 3 days or frozen for 3 months.
