Instructions
Step 1: In a large skillet over medium heat, cook the chopped bacon pieces until browned and crispy. Remove and drain on paper towels.
Step 2: In the same skillet, add diced onions and cook until soft and translucent, about 5-7 minutes. Add smashed garlic and sauté for another minute.
Step 3: Transfer cooked bacon, sautéed onions, and garlic to the crock pot. Add apple cider vinegar, brown sugar, maple syrup, brewed coffee, and red pepper flakes. Stir to combine.
Step 4: Cover the crock pot and cook on low for 6 to 8 hours, stirring occasionally until thick and jam-like.
Step 5: Optionally, blend the bacon jam for a smoother texture using an immersion blender or food processor.
Step 6: Transfer to jars or airtight containers, let cool, then seal. Enjoy on various dishes or gift to friends!
Notes
Store in the refrigerator for up to two weeks. Can be frozen in small portions for longer storage.
