Place the chicken breasts in the crockpot in a single layer if possible.
Season the chicken evenly with kosher salt, ground black pepper, garlic powder, and Italian seasoning.
Pour the low-sodium chicken broth over the seasoned chicken.
Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is cooked through and pulls apart easily.
Transfer the chicken to a bowl or cutting board and shred with two forks.
Return shredded chicken to the crockpot to soak up juices if desired, then serve or store as desired.
