In a large mixing bowl, combine the ground turkey, egg, diced green peppers, minced cilantro, curry paste (or curry powder), and salt and pepper to taste.
Mix gently until ingredients are evenly distributed, taking care not to overwork the meat.
Form the mixture into 5 evenly sized patties.
Brush or drizzle both sides of each patty with extra-virgin olive oil.
Cook the patties on a preheated indoor electric grill or in a large nonstick skillet over medium-high heat for about 6 minutes per side, until the internal temperature reaches 165°F (74°C) and the burgers are cooked through.
Place each cooked patty on a split crusty roll and top with lettuce and sliced tomato. Spread mango chutney on the roll tops if using.
