  • 2 pounds potatoes Russets or Yukon Golds work well
  • 2 tablespoons olive oil or avocado oil
  • 3/4 teaspoon dried rosemary
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Fresh parsley optional garnish for color

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). A high temperature is crucial for achieving that deliciously crispy exterior.
  2. Step 2: Peel the potatoes and cut them into 1-inch cubes. Try to keep the pieces uniform in size to ensure even cooking.
  3. Step 3: In a mixing bowl, combine the diced potatoes with olive oil, dried rosemary, dried oregano, garlic powder, onion powder, salt, and black pepper. Toss until the potatoes are evenly coated with the oil and seasonings.
  4. Step 4: Spread the seasoned potatoes in a single layer on a baking sheet. Make sure they’re not overcrowded to allow for proper roasting.
  5. Step 5: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Halfway through, use a spatula to flip the potatoes for even browning.
  6. Step 6: The potatoes are done when they are golden brown and crispy on the outside and tender on the inside. Test them by piercing a cube with a fork; it should be soft.
  7. Step 7: Once roasted to perfection, remove the potatoes from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley if desired before serving.
